Try this... Spiced chicken

THIS is a really tasty chicken recipe which is ideal for the BBQ and the marinade is also made into a creamy dip.

Serves: 4; Preparation time: 10 Minutes; Cooking time: 20 Minutes

Ingredients: 3 garlic cloves, peeled and crushed, Zest and juice of 1 lemon, 2 teaspoons paprika, 2 teaspoons ground coriander, 2 teaspoons ground cumin, 2 half tablespoons olive oil, 4 x 150g skinless chicken breast fillets, with slashes cut into one side, half 28g pack Sainsbury’s fresh coriander, finely chopped, 4 tablespoons half-fat crème fraîche, 1 x 120g bag Sainsbury’s bistro salad, to serve.

Method: 1. Prepare the marinade: mix together the garlic, lemon zest, juice, paprika, coriander and cumin. Set aside, 1½ tablespoons for the dip. Add the oil to the remaining marinade and season. Place the chicken in a dish, pour over the marinade and leave to marinate for at least 30 minutes.

2. Meanwhile, heat the barbecue until the coals are grey. Grill the chicken for 15-20 minutes, turning frequently, until cooked through.

3. Mix the coriander and reserved marinade into the crème fraîche to make a creamy dip. Serve with the chicken and salad leaves.
