Try this...Christmas Salad
I KNOW it seems a bit early to mention the “C” word but in case you havent noticed the festive season is almost upon us. This recipe is perfect as a colourful and nutritious starter or a healthy light lunch.
I cooked this up at the Olympia Good Food Show and everyone there really enjoyed it. The avocado is a delicious fruit and is rich in omega 3 making it a healthy choice.

Hide AdTo remove the stone simply cut into the pear until the knife touches the stone and then cut the pear in half by cutting right round the stone.
Twist the two halves to separate them and remove the stone by making a single chop with the blade of a sharp knife in one single movement.
The knife is lodged into the stone, and then all you need to do is twist the knife and the stone is easily removed.
Christmas Salad
Serves 4 as a starter
Ingredients: four Taste the difference extra sweet clementines, one ripe avocado, three tablespoons olive oil, one teaspoon lemon juice, 75g pack Sainsbury’s watercress, 120g pack Scottish Smoked Salmon, a few twists of the By Sainsburys Roasted garlic and herb grinder; to garnish: 1 tablespoon baby capers.

Hide AdMethod: Peel the clementines, leaving them whole, then slice each horizontally into three. Cut the avocado into half, remove the stone then peel off the skin and cut into slices.
Toss the clementines and avocado with the oil and lemon juice, add the watercress and scatter on to a plate.
Top with pieces of smoked salmon.
Sprinkle with freshly ground roasted garlic and herb and toss over the capers for a fantastic festive starter.
